We have imported version for you. We don’t remove theme, we removed the version, in other words, import of the theme options and home page installation for the Caramel version. Minor theme updates won’t make any critical changes on your site. If we release the major update then we would recommend you to create staging site and test theme update there before the production site update.

1) Provide me screenshot of the element in your content where you used product categories and that code does not work.
2) Looks that problem is related to a3 Lazy Load plugin, if we inspect image in Chrome we can see the following styles of the plugin http://prntscr.com/lnir2v
Once I check your site in Safari I don’t see that code anymore because “lazy-loaded” class does not appear for that image. I don’t know why this happens for the Safari. Either disable that plugin or contact plugin author to solve the problem.

1) Problem was caused by custom CSS in Theme Options > Custom CSS and in WP custom CSS (Appearance > Customize > Custom CSS). You are using child theme so I would recommend you to move both customs to child theme style.css.

2) Can you provide the screenshot of the error message and add the element below the existing products to allow us to check the issue?

From your description, it is server resource shortage or server settings.
If your server is using mod_security or FastCGI handler for PHP you need to contact with your hosting provider and ask to increase the maximum body length value.
I have added code in your .htaccess file to implement this but it would be better if the provider changes it in the server settings.
