Problem caused by out of date header.php in your child theme. If you want to add GA code there is no need to copy header.php file, use Insert headers and Footer plugin http://prntscr.com/s3i06t

Hello,
Does it happen with our theme only? Does everything work fine with the Storefront theme? We are able to help only in case issue appear with the XStore theme only and default WooCommerce things work fine with the default WooCommerce theme. In case the default WooCommerce things do not work even with the default theme we can do nothing, not because we don’t want to help but because problem is not related to theme files. We are responsible for our code and our settings only.

Maybe you tried to install a few demos one over the other and one from WPBakery and another from Elementor, then both plugins were installed during installation of appropriate demos.
Oh, I see. You are talking about header overlap option. You want to show the header over the slider on the home page. Create multiple header for the home page and change its bg color to transparent. Describe in more detail when exactly you get the Internal server error (step by step your actions).
I see that you installed and activated 2 page builders: Elementor and WPBakery. Why do you need both? Please, choose the one you prefer the most and disable the other one. You can’t use them both at the same time.

Yes, because it will be cut of to cover the slider area. Image comes as the background in this slider, so slider height does not depend on image size but on custom height settings or content height. In case you don’t plan to use any content http://prntscr.com/s3ends and just want to show the image with auto height then it would better to use the Image Gallery element with Nivo slider gallery type instead of the slider element.
