When Single Product builder is activated, content of the “Default single-product” template is applied for all products, you can create a few different templates and set them depends on your needs with different conditions. Once you disable the Single product builder, settings from Theme Options > WooCommerce > Single product page will be applied. When the builder is disabled, custom templates do not work.

Try to disable all the third-party plugins (including cache plugins), that do not come bundled with XStore https://www.8theme.com/documentation/xstore/plugins/included-plugins/ , clear cache of browser, and check then. Maybe one of the additional plugins is a reason for the problem.

5/ Theme options > General > Enable Old Widgets Panel > On. Appearance > Widgets > edt content of Shop sidebar area. The categories widget is not a filter. Neither WooCommerce nor our theme has filter by categories, there is only the categories list widget. If you need a filter widget you need to look for third-party filer plugins.
