Mini cart does not display payment options and there is no option in our theme to add it there. Only the checkout page displays the list of available payment gateways. The paypal button that to can see in the mini cart comes from the Paypal settings. Go to Paypal plugin settings to disable that button for the mini cart.

All the moments related to discount calculation on the cart page or attaching any coupon codes it’s not related to the progress bar settings, this is something you need to take care of from the WooCommerce side (using WooCommerce coupon option or third-party plugin).

If you want to use your custom templates for the products then why do you disable the Single product builder? Disabling the builder means that you don’t want to use the custom template but prefer one of the built-in layouts available under Theme Options > WooCommerce > Single Product > Single product layout.
If you want to use 1 custom template for all the products then there is not need to create multiple templates here https://prnt.sc/1t4kaso Just edit the default template that you get while opening a single product builder.
