You don’t need to activate WPBakery to update it. Go to Plugins > deactivate WPBakery and remove it. After that go to Appearance > Install plugins > install WPBakery plugin again and you’ll get the updated version of plugin.

Either set up the plugin according to theme documentation https://www.8theme.com/documentation/xstore/plugins/woocommerce-infinite-scroll-and-ajax-pagination-settings/ or disable it to use the default pagination instead of the infinite scroll.
