Hi there

I’m unable to change an existing menu item link and save. It doesn’t allow me to for some reason.

Hello,

Are you talking about menu custom link http://prntscr.com/uq14z6 ?
Try to increase the Max input vars to 2000 and try again.

Hello,

I don’t see the Nike item in the list. Contact your hosting provider to increase the Max input vars, this is the server param.

They’ve updated that so that still isn’t working. Any ideas what else it could be?

As I can see, the value was not increased – https://prnt.sc/ur1xox Contact your hosting provider one more time.
Very likely you reached the Max Input Vars limit because of menu items number and your WP can’t save all the settings of your menu. So, if you choose the option, save the menu but then you’ll see that option is not saved then increase max input vars limit to 5000 or 8000. Read more http://sevenspark.com/wordpress/menu-item-limit
