Take into account that when you switching themes widgets could be messed up that’s why after switching you need to go to Appearance > Widgets > and place them to correct areas.

Also, child theme inherits parent theme styles but it does not inherit theme options, so if you want to switch theme just for testing purposes then just ignore the missing header but if you want to switch to other theme on regular basis then don’t forget to Export theme settings before switching (Theme Options > Export/Import ) and import them after switching.

It looks that some glitch happened during header building and now you can fix it only by header reset and build it again, unfortunately. So, go to Theme Options > Header Builder > Reset header builder http://prntscr.com/u63fou > Reset header elements, publish and reload the page. Go to the Header builder and build the header again.

We would be able to help you with this if your site would be online but if you use the localhost then do it by yourself.

Both areas Additional CSS and Theme Custom CSS save changes to DataBase, so you won’t lose it after theme update if you don’t reset the DataBase. By default, theme updates affect parent theme files only, not DB tables.

Difference between Additional CSS and Theme Custom CSS is that the first area is the default WP area and you’ll be able to edit that code even if change theme.

Unfortunately, WooCommerce detects the unexisting variation or out of stock variation only if that option is enabled. Anyway, you may try to connect WooCommerce support https://wordpress.org/support/plugin/woocommerce/ to improve their function that displays products if “Hide out of stock” option is enabled.
