Try to disable all the third-party plugins (including cache plugins), that does not come bundled with XStore https://www.8theme.com/documentation/xstore/plugins/included-plugins/ , clear the cache of the browser, and check then. Maybe one of the additional plugins is a reason for the problem.
OR
If you did some Customization in your Child Theme then please try to activate the Parent Theme and check back again, might be your Customization creates the issue on your site.
And if the issue will still persist then please take the complete backup of your site, first.
And I also need your permission to debug your site, which includes deactivating all the third-party plugins and on-site Customization as well.

Thanks for the access, I have checked your issue and found that the settings were set to fine already then I check the categories on your site and you don’t have any child categories all are the main categories on your site as you can see in this image of your site: https://postimg.cc/xX2tFpgR so it is why the child categories do not appear on the sidebar all you have to do is to add some child categories by assigning them their parent categories then check back to your site after clearing the browser cache.

I have checked your site and the theme was already installed and activated on your site. I disable the plugin “Elementor Header & Footer” after that I checked your issue.
By disabling the plugin the menu appears fine on the backend Dashboard >> Appearance >> Menus
By disabling the plugin on the site, the frontend menu appears just fine there is no issue.

1- Actually, Yes, it is possible and you can do it. Let me explain to you.
When you edit a product from the product options on the edit product page you will see the option for the countdown as you can see in this image: https://prnt.sc/vq1Ghu9hEzxR
By doing this you can set the countdown on simple products only.
For the Variable Products: The creation of the countdown for every product variation will slow down the product page a lot. That’s why we did not add that.

I can see you have an active server cache Litespeed as well so you have to flush the cache completely and deactivate it til your site is in the development process.
