Do you have the same situation when a default theme, like Storefront, is activated on your site? I suppose you should contact some SEO specialist concerning search engine indexation, because it is independent of our theme settings.
You can use Lightshot screenshot or Gyazo tool to share links to your screenshots next time.

Have you found out what exactly option of WPRocket causes the isue? We use this plugin on our demos. Maybe there is a conflict of some option with a 3rd party plugin on your site. Try to change the settings of the cache plugin to find out the best combination.

There is no option to enable the popup for Home page only. However, you can try to use Multiple headers functionality, to create a custom header for the Home page that contains the Newsletter element.

1/ Theme Options > WooCommerce > Shop > Shop page layout > Sidebar Position For Mobile > Off-Canvas
2/ Theme options > General > Enable Old Widgets Panel > On. Go to Apperance > Widgets > add Product Categories widget into the desired area, for example https://prnt.sc/20xubkn
