Please provide temporary wp-admin and FTP access, so I can pass this question to our dev team.
To provide wp-admin access, you can create a new user account with administrator role via the Dashboard, and provide us with the username and password via the Private Content area.
To create FTP access (FTP host, FTP username, FTP password, FTP port, FTP encryption) , please contact your hosting provider for assistance.
2/ Product variation that is “Out of stock” can be displayed like this -http://prntscr.com/t21xou with our variation swatches (in case “Hide out of stock products from catalog” option is enabled in WooCommerce > Settings > Products > Inventory).
Could you please check how it works when Advanced Layout is disabled in Theme Options > WooCommerce > Cart/Checkout Layout?

But we thought about solving this issue from another side because according to your needs as we got you right you want to keep your gallery always in the area of customers so we decided to propose the next solution:
– disable the sticky option. Or
– the next custom CSS code:

1/ Appearance > Widgets > add widgets into the Shop sidebar area. Then enable the sidebar for Shop page via Theme Options > WooCommerce > Shop > Shop page layout.
2/ Please try to add some content into Shop filters area in Appearance > Widgets. Or create a static block and add it into Theme Options > WooCommerce > Shop > Shop page layout > Banner Content.
3/ For example? What exactly do you want to change?
