We use this type for popular products (can be displayed by adding Products element on page) – the products that are best sold are displayed automatically. While your site is not live and there are no real sales, products that are shown there may be random, but this product type will work correctly later.
If you want to select what products to show, add heading with the desired text + Products element, set desired products in settings of the element.

If your settings are correct, try the next: disable all the third-party plugins (including cache plugins), that do not come bundled with XStore https://www.8theme.com/documentation/xstore/plugins/included-plugins/ , clear cache of browser, and check then. Maybe one of the additional plugins is a reason for the problem.

We need to enable wp debug mode and do some changes/tests in files to troubleshoot the problem.
