1) Did you read my previous message? We don’t have Grab now button of the shop page! It’s for the single product page only. You can edit colors of the LIght buttons at Theme Options > Styling http://prntscr.com/vtsdza

The default template appears for all the products, if you want to create special template for the products with some conditions then use the multiple templates option. We can’t make option to make the other template as the default one.
2) You can use the HTML block element to add the different Static blocks for the different templates.
