Hello,
Your screenshot is broken. Go to Theme Options > Header builder > Sticky header > choose the logo you want to show there or remove the logo to use the default one. Also, choose the bg color for the sticky header and the text color for the sticky header in the sticky header settings.

All the available breadcrumbs setting you can fin in Theme Options > Breadcrumbs. You are able to choose the breadcrumbs type from one of the built-in types in the page settings (Pages > edit page > 8theme Layout > breadcrumbs type) but there is no custom type.

That menu is just the demo content to show that you could add the language selector to that area if you decide to create the multilanguage site.
If you want to create the multilanguage site you need additional plugin to implement this: WPML or Polylang or any other https://www.wpbeginner.com/showcase/9-best-translation-plugins-for-wordpress-websites/
Then just add language widget to the header widget area.

Could you, please, describe issue in more detail? Provide screenshot of the issue for better understanding.
1) I changed the links in the custom CSS of some of the Static blocks you created just to explain the issue but not in all of them. I suppose you should better know where you added that custom code for the mentioned versions.
So, check the static block and custom code for them. I’m not sure why you added custom code for every block you have instead of adding it to the child theme style.css but you better know your projects, probably you had reasons for this.

If you want to change the title line-height add the below code to custom CSS
1) Do you want to change it for mobile-only or for the desktop too?
If you want to change for both then edit drop-down settings https://prnt.sc/19hjmp2
2) Edit child theme style.css and change the padding to 0 https://prnt.sc/19he4fy for the whole site or edit the page and add the custom code with 0 padding for this page only.
3) Check the server error logs to find out what error appears in logs when you get 500 on the frontend. It will help you to understand what is the reason of the 500 error on the frontend.
