You can’t add to cart variable product if you did not choose the variation. That’s why variable product redirects you to the single product page to allow you to choose the variation.
So, if you want to be able to add the variable product to the cart from the product grid you can enable variation swatches https://youtu.be/LgzC4iK-j6A and then you’ll be able to choose the variation from the grid.

Disable unnecessary third-party plugins, install and use cache plugin, optimize images.
Also, you can find optimization settings of our theme in Theme Options > Speed Optimization. Enable Lazy loading for the images there.
For the home page I would recommend you enable Lazy loading for the Products elements.
Contact your hosting provider about the Memory limit issue. We can do nothing with that. So, your hosting provider will be able to increase the memory limit and check which plugin uses all your memory.
It’s because option of the Elementor plugin that you enabled https://prnt.sc/1rpax63 it caused js errors on the page https://prnt.sc/1rpb097. I have set Default there and sidebar is ok.

First of all, we would recommend you to check the list of plugins that you use and disable plugins that you don’t really use. For example, do you use 360 products on your site? Then don’t keep the Smart product viewer plugin enabled etc.
“delete unused CSS” option could remove even necessary styles, besides it’s Beta version of the option. So, if it causes issues on your site then it would be better to disbale that.
Update theme to latest version. We made a number of speed improvements in 8.x version of our theme.
Optimize images of your site, https://tinypng.com/ is a great tool for that (this service also has plugin for these purposes).
Enable Lazy loading for the images in the Theme Options > Speed optimization > Images loading type.
What problem and with which script do you have?
