Try to disable third-party plugins and check after that. If it does not help then provide us with FTP access.
1) WooCommerce displays products from the parent category Υπνοδωμάτιο, not from the subcategories. Both products were added to Υπνοδωμάτιο category.
2) What toggle do you mean? There is no any additional toggle to show all the Dashboard items https://prnt.sc/1yfn8ex Anyway, it’s not necessary anymore.

If you want to reduce the number of the DOM elements on the page then edit page and remove sections. Keep only those that you really need. Do the same for the footer. It’s related to content management. We can do nothing with this from our side, unfortunately.

You can reduce the number of DOM elements on the page only by removing unnecessary blocks from the page content, footer, header. There is no other way to reduce that.

I checked theme optimization settings and everything is enabled that could speed up site.
Unfortunately, we don’t have more options to improve speed from theme side. Try to contact your hosting provider, maybe they will be able to hep you from server side.
