I would recommend you to remove the home page header in this case. After that edit the default header for the final version. Once you get the final version of the default header then go to Multiple headers and create the header for the home page. Enable header overlap option for the home page header and remove header bg for the home page header.
Or edit the default header according to your needs and we’ll help you with the home page header after that.

Can’t tell you the reason without server error logs. So, your hosting provider should check the server error logs and report us if you have any errors related to the theme or XStore plugin there. Because at this moment fatal error is related to WooCommerce and we can do nothing with this from our side.
Next time don’t skip the main plugins update for so long. Because as you can see it caused the issues.
And we would recommend testing updates on the staging site next time before updating the production site.

There is no option to remove the category from the breadcrumbs. If you have PHP skills you may try to customize breadcrumbs in child theme.
Or just rename your category to something logical instead of Uncategorized.

It’s easy to check if the error is related to them. Once you get the error you need to switch to the Storefront theme and check. If you still don’t have products then the issue is not related to the theme.
We resaved permalinks (Settings > Permalinks) for the yourlight and the shop works ok again. So, server permalinks settings could be the reason. Our theme does not have any code that may affect that.
