All the options available for the products order you can find in Customizer > WooCommerce > Product catalog. By default, WooCommerce does not have option to order by category.

The “Additional Information” tab will only show if the product has weight, dimensions or attributes (with “Visible on the product page” checked).

Where is the core plugin translation file is located? Use either system or custom http://prntscr.com/uu3tc6 Don’t use the author because you will lose translation after the plugin update.

If the translation was removed then you need to create it again and translate the necessary strings.
