1) I don’t know what you got yesterday but I tried a few hours ago and it was empty.
So, would recommend you to create all the templates you need and save changes. Let me know if you can’t save your changes or don’t get emails once you save your changes.
2) Are you talking about Appearance > Customizer? Then disable the WP-Optimize – Clean, Compress, Cache plugin and try again. It works once plugin is disabled or if Page cache option is disabled.
Or what customizer are you talking about? Provide screenshot, please.

The mentioned issue is not related to our theme. We enabled the default WP theme Storefront and got the same quality of the images https://gyazo.com/5c12f4fe0c69a9a48daa60759445671c You can enable and check by yourself.
So, we can do nothing with this. Our support is able to help only with issues related strictly to our theme, sorry.

So, just create templates with the content you need.
There is no migration tool from Elementor to WPBakery to transform content created using Elementor to WPBakery. You can install and use WPBakery for the new pages, etc but you can’t edit pages created using Elementor.
Clear the server cache, plugin cache, and browser cache and check the single product again.

You use the header with the overlap effect (header displays over the content). You can disable this effect for the mobile only in the Header Overlap settings but it will affect all the pages, not just home page. So, create home page header using the multiple headers option and disable the header overlap option for the mobile home page header https://youtu.be/BpeXfzNwkOc
Or you may try to add the empty space element (85px) and set in column settings to show it for the mobile device only.
Choose the way most suitable for you.
