Unfortunately, at this moment we don’t have option to show the categories list from Products > Categories there. All departments element displays the menu that you created in Appearance > Menus, so to change that list you need to edit your menu.

Error comes because of the third-party swatches plugin that you use. They have the following file https://prnt.sc/1twwdtc where they add compatibility with the premium themes. Please, contact the plugin author and ask them to add compatibility with the XStore theme too.
