Have you activated XStore Core plugin?
Try to disable all the third-party plugins that do not come bundled with our theme https://www.8theme.com/documentation/xstore/plugins/included-plugins/ and check if you still have the problem. Do not forget to clear cache or even disable it temporary.
Let me know the result.
Also, provide temporary wp-admin and FTP access – http://prntscr.com/nh9pq2

Hello,

The latest version of WC is 3.6.2 and the latest version of WooPress is 5.0.
Did you make changes in template files? If you edited files via child theme, they should be updated accordingly to new files.

Error 500 means that there is some Fatal error in PHP script or on the server side (there is lack of some resources on your server). Turn on debug mode in WordPress to see the error https://codex.wordpress.org/Debugging_in_WordPress
Also, contact hosting provider support and ask them to increase values for the functions Post Max Size, Max Upload Size and Max Input Vars https://www.8theme.com/documentation/xstore/theme-installation/xstore-theme-requirements/
