Theme Options > Shop > Products per page > -1 , Open filter by default > On, Show products toolbar on the shop page > Off. Appearance > Widgets > Shop filters > add Product Categories widget.

If you also need the language switcher then use one of the third-party plugins (WPML or qTranslate or Polylang) to implement that because select on our demo is just an example of content that could be placed there. If you decide to use WPML then to implement currency switcher install WooCommerce WPML and add the switcher widget to left top bar widget area. In case you choose one of the other 2 plugins then you may use Multi-currency for WooCommerce plugin https://wordpress.org/plugins/woo-multi-currency/ or similar.
