So, you need to wait for theme update, then update parent theme on your site. If you still have out of date files in child theme after that you will need to compare parent theme files and your child theme files and add the difference. If you check the console you’ll see error http://prntscr.com/eylz6u because of Advanced Custom Fields PRO plugin, you are using old version of this plugin by the way.
So, once I disabled that plugin I can edit variations http://prntscr.com/eym06p

I don’t know why it does not work for you if you disable third-party plugins that did not come bundled with our theme.
