All available permalinks settings you may find in Settings > Permalinks. We do not have special options to change category url.

Please try to activate Storefront theme – official WC theme and check if you have this issue with our theme only or even with official theme too. In case, the problem appears only with our theme provide wp-admin access in Private Content.

– PHP max input vars to 10000.
Make sure that wp_remote_get(), wp_remote_post(), file_get_contents functions are enabled on your server. Let me know about results.
