1/There is no such possibility, unfortunately. If you want to change the functionality of the default WooCommerce Product categories widget, contact the support of WC.
2/ Theme Options > General > Enable Old Widgets Panel > On. Then go to Dashboard > Appearance > Widgets > Shop sidebar. There you will find all available widgets.
3/ WooCommerce > Settings > Products > Inventory > Out of stock visibility > Hide out of stock items from the catalog
