1/ Could you try to use instead of {customer_name} -> {first_name} or combination of {first_name} {last_name}
2/ Did you check how it works with another order? Maybe the order you are sending for testing reasons is broken with such data you need to output in email.
3/ How does it work with default (non-builder) emails ?
