To download the theme from ThemeForest you need to enter the downloads area ThemeForest account, where you can view all your purchased themes. Find the XStore template among them, and click on the Download button to the right of the main content – download the theme’s .zip file directly.

New theme updates won’t include the old header structures, unfortunately.
Go to Theme Options > Header builder > Header templates > Ready To Go Headers > select header of the desired demo version, change settings, like Main menu > select menu, depends on your needs.
If you do not use a static block in the footer, go to Theme Options > Footer > Footer layout > set amount of Footer Columns, go to Dashboard >Widgets > Set the desired content into Footer areas.
