XStore theme has a lot of options and settings, it includes many plugins if you want to extend the shop functionality, that’s why it has some requirements to the server params https://www.8theme.com/documentation/xstore/theme-installation/xstore-theme-requirements/
If your server does not meet theme requirement you may have some problems. Then disable third-party plugins and just keep required plugins enabled.

If you are using the old version of WC you can’t use the latest version of the XStore theme, only 3.10.1. If you want to update theme to version 3.11.1 you need to update WC plugin to version 3.0.1.

How the auto update works: WP downloads the theme to /wp-content/upgrade/, extracts the theme, deletes the old one, and copies up the new one. I can’t understand why your server created folder with strange name instead of the normal one but as I can see the xstore folder in inside the xstore-ajf7nk folder http://prntscr.com/evw8cg
I suppose you need to ask your server admin why this happened.
