I meant not this global option https://prnt.sc/sbnqt6 but the local one: Theme Options > WooCommerce > Shop > Shop page layout > Masonry. It’s not compatible because masonry script take the height of the elements to place then one by one. If you use products Infinite Scroll that loads more products it changes the height of the page and causes overlap effect when new product appear over the previously loaded.
I would recommend Lazy loading for the images. And also use TinyPng service to optimize images before uploading to your media library https://tinypng.com/ It allows to optimize images a lot to reduce the size of your page and speed up the site because of this.

2/ May I ask you what page builder do you plan to use as the mail builder: WPBakery or Elementor? Because we don’t recommend you to keep enabled both. Choose the one of them and disable the other one.

You can try Masonry layout for your products http://prntscr.com/sblb9j It will help you to remove the gap http://prntscr.com/sblbj7 but then you will need to disable Infinite Scroll plugin because products masonry does not allow using of the infinite scroll.
