You can create custom sidebars (Appearance > Widgets) and add custom sidebar in page settings in Widget Area section http://prntscr.com/em51x4.
Also, you may try to use this plugin https://wordpress.org/plugins/woosidebars/ to get different sidebars for product categories. But we don’t guarantee its full compatibility with the theme.
