I did not find which one directory is your WP installation because all of themes have the store theme inside but none of the themes do not suit the list of themes in the Dashboard. So, I updated the theme via Dashboard and did not face any problems.

Maybe not all the files were copied. Not sure. We would recommend waiting for the next theme version that will be more stable than 8.0. We’ll fix some issues with sliders optimization that we missed during this update. So, wait till Monday-Tuesday before update other site. You’ll be able to update it via FTP but make sure that you copied all the theme and XStore core plugin files.
I see some js error from the Elementor Pro https://prnt.sc/1bwa60v that causes issue with the footer sections width. Contact Elementor plugi to fix this error.

If the only one issue that you have is the width of the footer then there is no need to restore backup because issue is related to Elementor Pro js error. You need contact plugin author to fix that.
If you have other issues then provide us with the screenshots for a better understanding of your problem and we’ll fix them.

I suppose that it also could be related to the mentioned js errors of the Elementor Pro. Let us know if Elementor support fix the error but image is still missing.

Our developers checked that element with the default WP theme at this page https://www.entreprisedunet.fr/test/ and got the same js error https://gyazo.com/f2730a9528a44bc2a77341a1980403f6 So, could you please clarify Elementor support why do they redirect you to theme author if it does not work even with the default WP theme? We can do nothing with this if it does not work ok even with the default theme.
