Should you wish to apply different layouts for various product categories, this can be achieved by creating multiple templates and assigning different conditions to each accordingly https://elementor.com/help/conditions/

However, if you are referring to editing the product description—where each product has a unique and individual description—there is no need to create multiple templates.
