We’ve recently updated to the latest theme and version of woocommerce, and we’re seeing that on the frontend, our product dropdowns are displaying all attributes, regardless of whether certain variations exist or not. For example, we have women’s jackets in size 31 and 33, but for men’s jackets the sizing starts at 35. Based on the dropdowns, a customer could attempt to select a men’s 33 jacket and get an error in return. Really, they shouldn’t even see a men’s 33 as an option. This is not how the dropdowns used to work. Please advise.

Sorry, but this is Woocommerce configuration https://wordpress.org/support/topic/variation-issue-with-244-still and you should ask them regarding this issue. If you check it with default Twenty Fifteen theme you’ll get the same action.
We can recommend you to create all possible combinations and just mark the ones you want to be chosen as “out of stock”.
