Is there a way to use the manual excerpt for blog posts?

Also, how do I display the blog post title in the page title, breadcrumb section rather than it displaying “Blog” on single pages?

Here is an image showing what I mean.

I want, on the main blog page, to use manual excerpt (rather than the read more insert) to avoid h tags from showing.

Also, on single post, I want to replace “Blog” with the title of the post.

There has to be a way to use manual excerpts at the very least. I would be so grateful if there is. Otherwise, my blog looks awful.
