    Hello,
    How can I create a “category” sidebar in the SHOP as in your demo, as well as a “shop by prices”?
    Is there documentation about it?

    Hello,

    You need add “Woocommerce Product Categories” and “Woocommerce Price Filter” widgets to “Shop Sidebar” area in Appearance > Widgets.

    another question about the topic is about the “product Categories” bar.
    How can I create categories and sub-categories like in the demo?
    with the +/- buttons that shows or hide the sub-categories?

    You need create categories in Products > Categories.

    Another question about the sidebar for the shop:
    The categories work very well but:
    – Which widget should I use to have the additional filters with the small square you can “check” ( like “colors” and “Size” in your demo )
    – Once I add that widget to the sidebar store, how can I add elements (like colours) in it?

    The widget in sidebar is “Woocommerce Layered Nav Filter”.
