Not able to customize demo data (Copyright bar color, Static blocks data).

Thanks for contacting us.
Theme Options > Footer > Copyrights styling > https://prnt.sc/u5zwlx
You need to enable the Elementor for static blocks – https://prnt.sc/u5zurr then go to edit Prefooter static block using the Elementor, for example, https://prnt.sc/u5zve9

Do you use a cache plugin or CDN?
We need temporary access to your Dashboard to be able to take a closer look.
Create an account via Dashboard (Users > Add new) with administrator role http://prntscr.com/s3rc9m > provide us with username and password via the Private Content area http://prntscr.com/s5mao7 You can use any email for it. Delete this account once all questions will be solved.

You can try this plugin https://wordpress.org/plugins/wordpress-database-reset/ to remove all the existing content and install new version from scratch.
Also, there are new versions of the theme and the Core plugin – https://xstore.8theme.com/update-history/ If you want to use the latest version of Elementor plugin, you need to do the update.
