I’m trying to link the static blocks I’m using on the menu to the categories, but I don’t seem to have an option. What’s the quickest way of doing this?

You can create multiple WordPress menus with names such as Categories 01, Categories 02, and so on. Then, instead of using the Menu List, please use the WordPress Menu Widgets (https://prnt.sc/GQ5-YmLVF3wq), which will dynamically display the items configured in the WordPress menu links: https://wordpress.com/support/menus/.

Hiya, I am trying to avoid doing these manually because there’s loads of menus. On the instructions you gave me, it’s not very clear, it’s a little bit confusing. Are you able to give me some better instructions?

Could you please clarify which part is unclear to you? You can create several menus with different categories and then use the WordPress Menu widget in Elementor, where you can select the menu you have created. Screenshots have been attached above to help you better understand the process and implement it on your side.
Would you prefer to avoid this solution and add the links manually? In that case, you can set the URL of each specific category in the menu item (https://prnt.sc/86U5MuL6Yu9t), as shown here: https://prnt.sc/PeE2HfwBo5gT, and copy the URL as demonstrated here: https://prnt.sc/XHt2mkyhDdm1.

And yes, as I mentioned before, Jack, I can actually do them manually, but I don’t want to do them manually because it’s a long process. There’s hundreds and hundreds of categories.

If you do not see this widget in the list of available options, it is possible that the widget is inactive in the Elements Manager (https://elementor.com/help/element-manager/). Please check there and activate it if necessary. Since you have not provided us with wp-admin access, we kindly ask you to verify this on your side.
Additionally, if you have multiple categories, you may wish to display them as one of our customers did here: https://www.8theme.com/topic/all-department-menu-is-having-issues-when-showing-several-items/#post-461376. The solution implemented by that customer involved using the Product Categories List widget with the following settings:

3. The categories displayed are the child categories of the main category set in the widget settings (https://prnt.sc/c289vwQr0353).
