  When you add a product to the cart on my website and then go to hover over the basket, the mini cart appears but as soon as you move the mouse to go down over it, it disappears? Any idea why that would be?

  I can’t log in to your site – http://prntscr.com/q2nhqi , unfortunately.
  Try to add padding-top and padding-bottom (10px) for the cart element via Header builder.

  Yes please take a look at my cart page adding a coupon.
  For some reason, the coupon and button are overlapping each over.
