the problem is that my client wants more than 1 blog category and i dont want to start creating php templates
i.e. trying to use the visual composer and your 8theme [blog] widget to accomplish showing different categories on different pages.
but i want the default look applied as well.

If your client wants to have more than 1 blog category you can create theme in Posts > Categories. If you want to get the filter by categories as on the pages that you provided you can use Post grid or Post masonry grid VC element to display posts with categories filter.
