  Any changes I make to the header do not appear on the site no matter what I do, clear cache etc…

  Hello,

  Check header on Shop page, maybe you have a custom header for the Home page. Provide URLand temporary wp-admin access, so we can take a closer look.

  It would appear the header updates on the shop pages, but not on the homepage… Can you point me in the right direction to turn off this function as it will be the same header across all pages.

  Go to the Multiple headers section and remove the home page header.
