so currently on shop pages under filters it brings up categories and price as possible filters.
how can i remove categories from this? and possible to add others? or.. to change the text to read “filter by price”?

You can use Loco Translate plugin and change that text using translation files – http://xstore.helpscoutdocs.com/article/30-base-theme-translation
