  I am running the theme in Catalogue mode with woocommerce – is it possible to disable the click through to product pages? I want just the ‘quick view’ and ‘add to wishlist’ buttons to work and for people not to have to go to individual product pages

  Sorry, but there is no such option. You may ask Woocommerce support team as Shop page is related to their configuration.
