The “Custom heading setting” in VC appears not to allow me to change the colour of the text?

Please check plugins versions. If you use latest versions of theme and plugins, please provide wp-admin access in Private Content.

You need to update WPBakery Visual Composer and Massive Addons for Visual Composer plugins http://xstore.helpscoutdocs.com/article/37-plugins-update.
