  When our cart is empty, the $ changes to £ in the header while the cart is empty.

  0 (£0.00)

  We’ve set the currency to dollars and it shows $ when a product is added.

  Please clear the cache and check one more time – https://prnt.sc/uwk17n Try to add a product to cart and delete, then check.
