Can’t Figure Out How to Set Default Product Attribute

I havent set up a new store with this theme in a while. I remember (I think) on a previous store with this theme I was able to set up a default value for size on tshirts so that customers could see the product change color when choosing only different color options.

I cant seem to find the option anymore to set default size in attributes; how do I do this?

I believe there is confusion in the question I am asking – I have set up what you showed. I want to set sizes of all clothing I have to default to medium size so that variation actually changes. I see i can do it manually but i thought the theme came with an option to set default selected value.

See link I have provided. color does not change unless color AND size is chosen so i want all products to have a default value of medium.
