I have no idea where to start…. from the dashboard, when I click the “Customize Your Site” button I see the header I created as expected. But when I click “View Your Site” from the Next Steps section I see a different header on the home page.

Honestly, I would actually like to just start over from scratch. How do I delete everything and begin again with a fresh demo template?

    Hello,

We can’t see screenshots you provided – http://prntscr.com/rcwcdq Please check.
Lightshot Screenshot tool https://app.prntscr.com/en/index.html makes screenshots and generates links of them then you can provide links of screenshots here.

    Please watch our video tutorials – https://www.youtube.com/playlist?list=PLMqMSqDgPNmCCyem_z9l2ZJ1owQUaFCE3 + https://www.youtube.com/watch?v=RbdKjQrFnO4&list=PLMqMSqDgPNmDu3kYqh-SAsfUqutW3ohlG

Optionally if you want to delete all the content in the site, you can use this plugin https://wordpress.org/plugins/wordpress-database-reset/ (use with caution, it deletes everything).

    Regards

Your first link sends me to an Error 401 page and wasn’t helpful. The header tutorial you referenced was also no help. The video gives zero explanation of what is happening and is way too fast to follow.

I will try to add the screenshots again.
