  Hello,

  1) It is default content that shows when the sidebar is empty, so you need to add the Product Categories widget into the sidebar and change the title there.
  2) http://prntscr.com/ntqws0
  3) Theme Options > Single product page > Tabs Settings > Custom Tab or Custom tab content on a separate product page > [8theme] Product Options.
