Concerning your query:
I just want to disable the excerpt theme function that overrides the excerpt wordpress native function.
Could you please show us an example what exactly you want to disable? Where do you see that excerpt theme function?
Unfortunately there is no possibility to add other menu, especially only for one page. Sorry.
