Hello, @Chris Barrett,
To update the category default sorting simply navigate to the Dashboard >> XSTORE >> Theme Options >> WooCommerce >> Product Catalogue >> Default Product Sorting and choose the default option from there as you can see in this image: https://postimg.cc/bdJL0vYW then check back to your site after clearing the browser cache.
