Hello, @Jozef,
1- Yes, because the blog page is coming from the WordPress by default and you cannot edit with page builder as the blog page is an Archive page and you can only edit, remove, and create posts from the Dashboard >> Posts they will appear on the blog page automatically, Further theme has blog options in which you can adjust some things on the blog archive ad single page. You can check this option by navigating to the Dashboard >> XSTORE >> Theme Settings >> Blog check the image: https://postimg.cc/kVy0H5vR
2- The header will be set from the Theme settings >> Header Builder there you will be able to change/edit the header as per your need.https://postimg.cc/rdz1BnSG
