WooCommerce sorting options you can find in Appearance > Customize > WooCommerce > Product page. You can check if this solution https://www.templatemonster.com/help/woocommerce-how-to-remove-some-options-from-the-sort-by-list.html is ok for you to remove some sorting options from the list. Use child theme function for these changes.
